PAXTON RECIPES CHOCOLATE CAKE

MISS DOVIE’S MAMA'S CHOCOLATE CAKE
        2 cups sugar
  1-3/4 cups all-purpose flour
  3/4 cup HERSHEY'S Cocoa
  1-1/2 teaspoons baking powder
  1-1/2 teaspoons baking soda
  1 teaspoon salt
  2 eggs
  1 cup milk
  1/2 cup vegetable oil or melted              lard
  2 teaspoons vanilla 
  1 cup boiling water

Grease and flour 3 8” pans.  Medium oven (350).
Sift dry into large bowl and make a well. Add eggs, milk, oil and vanilla; beat hard 200 strokes until it forms a ribbon.  (medium speed of mixer 2 minutes). Stir in boiling water (batter will be thin). Pour into pans.
Bake 30 to 35 minutes or until broomstraw in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool before frosting.
Make up frosting while cake is baking.

½ cup of butter (1 stick)
2/3 cup HERSHEY'S Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla
Melt butter, stir in cocoa and cook for about a half a minute to get the fudge taste. Beat in powdered sugar and milk in two parts each, beating til it’s spreadable.  Stir in vanilla.

(About here, I’d imagine she’d have added:  wash up dishes real quick and wipe down the kitchen.   Then go stand in the back door and swing it back and forth as hard as you can to get some of the heat out of the house.    Do the same with the front door, with all windows wide open.   Go to well and draw a bucket cold as you can get.   Wash your face and your arms up to the elbows, and put a wet rag on the back of your neck.   Wash your hair outside with the bucket you’ve had sitting in the sunshine since early morning, bind it up in a tight towel, go frost the cake, and then dry your hair out in the shade before THEY get home).   Sit in the swing with one of Nettie Frances’s magazines til you hear the buggy about to round the curve.

  2. I can't imagine how they did it back then in the heat. I think mine would have been getting all uncooked recipes or something at an outside fire pit.

  3. Hi Rachel, I am still catching up with all the comments and participants in Blue Monday. I am always tickled when I see your comments. Thank you my sweet friend for the kindest words. We did have a wonderful vacation and seeing those flowers was such an unexpected surprise. The first time I ever saw Chihuly's work was in Las Vegas at the Bilagio Hotel. The ceiling in the lobby was covered with his blown glass flowers. Then on HGTV they showed his blown glass flowers at the bottom of a pool in a private home. The pool was not for swimming. I also took some photos in the gift shop of his work that was for sale. $6,000. each. Yikes. I will share them soon.

    I love the recipe for the chocolate cake. I used to bake everything from scratch but I confess, not in a few years. I want to make that cake and it will be for our 4th child Christina, who is turning 50 in Sept. the 29th. So is her husband. We are trying to plan a party by long distance because but they live in Jax, FL. Football season is starting and we will be there in the middle of Sept. I hope we can work this out somehow. One thing for sure, I won't have to have the problem of hot weather thanks to air-conditioning. LOL.

    Love your story Rachel. I remember taking baths in a metal wash tub outside in the summer. All six kids one at a time in the same water. Yikes. HA! The good old days on the farm.

    I hope all is well with you and yours. I have missed you. Sometimes life is just too busy. What grade is Sweetpea in now? They grow so fast.

  5. I so love going back to each of your posts, reading, remembering.....
    when I was growing up, I don't remember POWDERED SUGAR in my mama's kitchen or my Aunt Lillian's...
    My favorite cake in the whole wide wonderful world is a plain white cake with FUDGE CANDY ICING...my mom made the best there ever was...and days when i miss her especially bad, i make myself that very cake...
